Summer’s warm weather calls for light meals, but it can also leave you stuck in a boring salad rut. Spice up your veggie bowl with these ideas for seasonal variety:

Lettuce: Take advantage of market-fresh (and vitamin-packed) greens like radicchio, arugula, spinach, and endive (for a bitter kick). Choose 1 as a base, or mix and match, like in this recipe!

Veggies: Instead of your usual tomato, use colorful heirloom varieties or slice in a slightly zestier tomatillo. For a sweeter mix, add a peach or plum (try this peachy salad). Trade your cucumber for jicama, radishes or beets.

Add-ons: Sprinkle on fresh farmer cheese or diced avocado, or you can also experiment with toppings like coconut flakes (great over a spinach and strawberry salad), goji berries and flax seeds, which add crunch and fiber.

Dressing: Ditch heavy (and calorie-laden) dressings for a light, zesty one you can make yourself. Mix equal parts olive oil and lemon juice, add a dash of salt and chop in your choice of fresh herbs (like parsley, dill and cilantro).
